SWELL restaurant at Knossos Beach Hotel opened its doors in 2011. The resort owner's vision was to create a fine dining experience showcasing local Cretan cuisine in an elegant setting with impeccable service. Partnering only with distinguished chefs, the menu incorporated select local produce and seafood, local meats and seasonal specialties. SWELL put its mark on the map of the finest haute cuisine restaurants with Michelin star award winning chef Lefteris Lazarou. In 2014 the tradition of excellence was passed on to Hector Botrin, who has been awarded a Michelin star. Chef Hector Botrini is famous for mastering the art of creating simple yet uniquely flavored dishes. And the success continues with the young generation with Chef Exarhos Delibasis taking the the tradition of the two great Chefs into a new era.
